  • 1.5 tablespoons finely chopped palm sugar This natural sweetener gives a depth of flavor.
  • 2 tablespoons shrimp paste Recommended brand: 'Golden Boy'.
  • 3-4 tablespoons lime juice Freshly squeezed is always best for that bright zing.
  • 1-2 teaspoons fish sauce A splash enhances the umami factor!
  • 2-3 tablespoons water Adjust the consistency to your preference.

Method
 

Preparation
  1. Cover the dried shrimp in water and microwave for 30 seconds, or until steaming hot. Let it cool.
  2. Drain the dried shrimp and pound in a mortar until fluffy.
  3. Toss in the garlic and chilies, continuing to pound until finely mixed.
  4. Add palm sugar, pounding until dissolved and combined with the shrimp mixture.
  5. Carefully fold in the shrimp paste until no clumps remain.
  6. Add lime juice and fish sauce. If too thick, mix in a tablespoon of water at a time until reaching your desired consistency.
  7. Taste-test and make adjustments as needed.

Notes

For the freshest taste, enjoy this dip immediately. You can store it in an airtight container in the fridge for up to 3 days. Consider preparing it a day in advance to enhance flavors.
