- Cover the dried shrimp in water and microwave for 30 seconds, or until steaming hot. Let it cool.
- Drain the dried shrimp and pound in a mortar until fluffy.
- Toss in the garlic and chilies, continuing to pound until finely mixed.
- Add palm sugar, pounding until dissolved and combined with the shrimp mixture.
- Carefully fold in the shrimp paste until no clumps remain.
- Add lime juice and fish sauce. If too thick, mix in a tablespoon of water at a time until reaching your desired consistency.
- Taste-test and make adjustments as needed.
