Method
Preparing the Dough
- In the bowl of a stand mixer, combine 1 cup softened salted butter with 3/4 cup packed brown sugar and 1/2 cup granulated sugar. Beat on medium speed for about 5 minutes until light and fluffy.
Add the Wet Ingredients
- Incorporate 1 large egg and 1 tbsp vanilla extract to the butter-sugar mixture. Mix until just combined.
Dry Ingredients Time
- In a medium bowl, whisk together 2 1/3 cups + 2 tsp all-purpose flour, 1 tsp baking soda, and 1 tsp kosher salt.
Combining It All
- Gradually add the dry mixture into the wet mixture until fully combined. Scrape down the sides to incorporate.
The Toblerone Surprise
- Fold in 2 cups of chopped Toblerone until even throughout the dough.
Chill
- Scoop the dough into tablespoon-sized balls and refrigerate for at least 4 hours or up to 3 days.
Baking Time
- Preheat your oven to 350°F. Bake for approximately 10 minutes.
Finishing Touch
- Place extra chopped Toblerone on warm cookies and let cool for 2 minutes before transferring to wire racks.
