  • 1 tsp baking soda For perfect rising.
  • 1 tsp kosher salt Enhances flavors.
  • 2 cups chopped Toblerone, plus extra for topping Use your favorite variety.

Method
 

Preparing the Dough
  1. In the bowl of a stand mixer, combine 1 cup softened salted butter with 3/4 cup packed brown sugar and 1/2 cup granulated sugar. Beat on medium speed for about 5 minutes until light and fluffy.
Add the Wet Ingredients
  1. Incorporate 1 large egg and 1 tbsp vanilla extract to the butter-sugar mixture. Mix until just combined.
Dry Ingredients Time
  1. In a medium bowl, whisk together 2 1/3 cups + 2 tsp all-purpose flour, 1 tsp baking soda, and 1 tsp kosher salt.
Combining It All
  1. Gradually add the dry mixture into the wet mixture until fully combined. Scrape down the sides to incorporate.
The Toblerone Surprise
  1. Fold in 2 cups of chopped Toblerone until even throughout the dough.
Chill
  1. Scoop the dough into tablespoon-sized balls and refrigerate for at least 4 hours or up to 3 days.
Baking Time
  1. Preheat your oven to 350°F. Bake for approximately 10 minutes.

  1. Place extra chopped Toblerone on warm cookies and let cool for 2 minutes before transferring to wire racks.
