Ingredients
  

For the meatballs
  • 1 lb ground turkey Look for organic if possible for enhanced flavor.
  • 2/3 cup Italian breadcrumbs Panko works great for extra crunch!
  • 3/4 cup onion, finely diced Use yellow or sweet onion for sweetness.
  • 1 large egg Make sure it’s at room temperature for better mixing!
  • 2 tsp garlic, freshly minced Fresh garlic elevates the flavor, but garlic powder can work in a pinch.
  • 3/4 tsp salt Adjust based on personal preference.
  • 1/2 tsp pepper Freshly cracked is best.
  • 1 tsp dried oregano Fresh oregano also performs wonderfully if you have it!
For serving
  • 3.5 cups cooked brown rice Use day-old rice for better texture—perfect for using up leftovers!
  • 4 cups cucumbers, sliced English cucumbers are ideal for fewer seeds.
  • 2 cups kalamata olives Pit them to make for easier eating!
  • 1.25 cups tzatziki sauce Store-bought is quick, but homemade is incredible.
  • Fresh dill Fresh dill For garnish and flavor.
  • 1 whole lemon, cut into wedges A squeeze brings freshness to the dish!

Method
 

Preparation
  1. Preheat the oven to 400°F. Prepare a baking sheet by lining it with parchment paper.
  2. In a large bowl, combine the ground turkey, breadcrumbs, finely diced onion, egg, minced garlic, salt, pepper, and oregano. Mix gently until just combined.
  3. With damp hands, shape the turkey mixture into 2-inch meatballs and arrange them evenly on the prepared baking sheet.
Cooking
  1. Bake the meatballs for 15 minutes, or until cooked through and golden brown.
  2. For a charred top, switch your oven to broil and cook for an additional 2-3 minutes.
Assembly
  1. While the meatballs bake, warm the cooked brown rice.
  2. Serve the meatballs over a bed of rice topped with cucumbers, kalamata olives, tzatziki sauce, and fresh dill.
  3. Add a lemon wedge on the side for a bright finish.

Notes

Opt for high-quality ingredients for better flavor. Prepare the meatball mixture a day ahead if desired. Store leftovers in an airtight container.
