  • 2 cups oats (rolled or quick) For chewy texture.
  • 1.5 tsp cinnamon Adds warm flavor.
  • 0.75 tsp sea salt Use coarse for crunch.
  • 2 cups mix-ins (nuts, seeds, dried fruit, chocolate chips) Chop large pieces to 1/4 inch.
  • 1.25 cups peanut butter Use natural for best flavor.
  • 0.75 cup honey Raw or local is best.
  • 1.5 tsp vanilla extract Avoid imitation.

Preparation
  1. Line a 9×13 inch baking dish with parchment paper, leaving some overhang for easy lifting.
  2. In a large bowl, combine oats, cinnamon, and sea salt. Stir gently.
  3. Chop your mix-ins into 1/4 inch pieces.
  4. In another bowl, whisk together peanut butter, honey, and vanilla until smooth.
  5. Pour the wet mixture into the dry mixture and fold until well combined.
  6. Press the mixture firmly into the prepared dish and refrigerate for at least 1 hour, ideally overnight.
  7. Lift the bars from the pan using the parchment overhang and slice into 16 bars.
  8. Store bars in an airtight container in the fridge for up to a week or freeze for longer storage.

Notes

Press down firmly to prevent crumbling. Add more honey or peanut butter if the mixture is crumbly. Experiment with different nut butters or sweeteners for variations.
